Recipe of the Month: Tessa’s Signature Vegan Chocolate Cake

We’re sharing one of our most popular and beloved recipes: Tessa’s Signature Vegan Chocolate Cake.

This cake is a favorite among our clients for its rich, moist texture and decadent chocolate flavor. Follow our step-by-step guide and create a delicious vegan treat at home!


Ingredients

For the Cake:

- 1 1/2 cups all-purpose flour

- 1 cup granulated sugar

- 1/2 cup cocoa powder

- 1 teaspoon baking soda

- 1/2 teaspoon salt

- 1 cup almond milk (or any plant-based milk)

- 1/2 cup vegetable oil

- 1 tablespoon apple cider vinegar

- 2 teaspoons vanilla extract

- 1 cup hot water


For the Frosting:

- 1/2 cup vegan butter, softened

- 2 1/2 cups powdered sugar

- 1/4 cup cocoa powder

- 1 teaspoon vanilla extract

- 2-3 tablespoons almond milk (or any plant-based milk)


Instructions


Step 1:


Preheat and Prepare

1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans, or line them with parchment paper.


Step 2: Mix Dry Ingredients

2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt. Mix well to combine.


Step 3: Combine Wet Ingredients

3. In a separate bowl, whisk together the almond milk, vegetable oil, apple cider vinegar, and vanilla extract.


Step 4: Create the Batter

4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

5. Add the hot water to the batter and stir until smooth. The batter will be thin, but that’s okay!


Step 5: Bake the Cake

6. Pour the batter evenly into the prepared cake pans.

7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

8. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.


Step 6: Prepare the Frosting

9. In a large bowl, beat the vegan butter until creamy.

10. Gradually add the powdered sugar and cocoa powder, mixing until smooth.

11. Add the vanilla extract and 2 tablespoons of almond milk. Beat on high until light and fluffy, adding an additional tablespoon of milk if needed for a spreadable consistency.


Step 7: Assemble the Cake

12. Place one cake layer on a serving plate and spread a generous amount of frosting on top.

13. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.

14. Decorate with vegan chocolate shavings, fresh berries, or any other toppings of your choice.


Step 8: Enjoy!

15. Slice and serve your delicious vegan chocolate cake. Enjoy with a cup of coffee or a glass of almond milk!
